WHAT I ATE TODAY – HEALTHY WINTER MEALS

I love seeing and hearing what other people eat, so I thought I’d document my day in meals a few weeks back for y’all to enjoy! 

Breakfast:

It has to be oats, the classic winter warmer breakfast. Currently I am loving Uncle Toby’s creamy honey with an extra sprinkling of brown sugar on top. In the winter I like to keep my toppings to a minimum, today I sprinkled some chopped almonds over top of my porridge, but raisins are also a great winter topping.

Lunch:

For lunch we had leftovers of a hearty and warming lamb stew that I found and recreated from delish.com (linked below). I followed this recipe to a tee however I did end up needing to add a flour slurry to thicken it which made it a lighter colour than the recipe but it was seriously the most delicious stew I’ve ever made. I halved the recipe and it fed my husband and I for two meals each! Serve it with sourdough bread to soak up the juices. Yum. And even better the following day.

Dinner:

To top the day off I created a mediterranean inspired healthy pork couscous salad, which included feta, red bell pepper and cilantro. We filled some whole wheat pitas with the couscous salad and drizzled a yoghurt and lemon dressing over top. On the side we also had some moroccan seasoned roasted cauliflower. Light and delicious and super filling. I prepared more salad than we needed, which fed us for lunch over the next few days.
