MY TWO GO-TO SUMMER PICNIC SALADS

With so many classic kiwi summer get togethers over the season, we all need a couple of go-to salad recipes to throw together to impress and feed our mates. Here are my favourites!

Pesto Pasta Salad

My absolute summer BBQ, shared-dinner classic. Everyone who has attended one with me has tasted this salad, and I always get tonnes of compliments. It must be good right?!

Ingredients:

Penne pasta

Fine pesto

Chopped sundried tomatoes

Baby spinach

Feta

Chopped walnuts

Method:

Cook the pasta until al dente. Stir through the pesto until it is coated and let it cool. Then stir in the sun dried tomatoes and baby spinach until well coated and combined. Sprinkle a generous helping of walnuts and feta to garnish and serve! To bulk it out even more, sometimes I’ll add some diced, roasted kumara.

Caprese Supreme Salad

Delicious and fresh for summer, this salad looks and tastes more expensive and complex than it is, it is so simple! If you don’t have mozzarella on hand or you’d like something cheaper, omit it for feta.

Ingredients:

Cherry tomatoes or heirloom tomatoes

Mozarella

Fresh basil

Avocado

Balsamic glaze

Lemon juice

Method:

Chop the tomatoes, mozzarella pearls and avocado into small chunks and toss together in your serving dish. Add a squeeze of lemon juice, and when you are ready to serve, drizzle some balsamic glaze.
