COZY QUARANTINE RECIPES

During these lockdown times you might be one of two people. You’ve either become an absolute chef whipping up magic in the kitchen or you’ve been eating the same thing every day and need some inspiration on how to spice up your meals. Either way, have a read through these recipes I’ve thrown together and get some inspiration! All three of these dishes are super simple, all of the meat and vegetables can be subbed to whatever you’re wanting to use up in the fridge, and a lot of the ingredients you might already have on hand. Enjoy.
Chicken and Stewed Rice
This is a delicious and ridiculously cheap meal and a great way to use leftover chicken.
Ingredients: Chicken, rice, vegetable stock, vegetable of your choice, seasonings.

1.Add 1 cup of rice and two and a half cups of vegetable stock to a pot and simmer.
2.Cover and let rice cook for 10 minutes.
3.When rice is almost cooked, add in your cooked shredded chicken and any leftover vegetables you have around (asparagus, mushrooms, beans, peas, or broccoli is especially good with this). You can also add in any herbs and spices that you enjoy, sometimes I’ll add lemon pepper and chilli flakes, this time I added in a moroccan seasoning mix.
4.Stir through and let rice cook for a few more minutes with the chicken soaking in the flavour
5.Season with salt and pepper.
Chicken Noodle Soup
A winter classic in my household. Replace the chicken with vegan chicken or quorn for a vegan alternative!
Ingredients: Chicken, onion, celery, carrot, vegetable stock, herbs, spaghetti noodles.


1.In a large pot add one chopped onion, a cup of chopped carrot and a cup of chopped celery and saute with olive oil.
2.After 2 minutes add two teaspoons of mixed herbs and stir through for a few more minutes.
3.Add six cups of vegetable stock, stir briefly and let it come to a boil.
4.Add a handful of dry pasta noodles to cook in the vege broth (break the noodles into small bits approximately 2cm long before adding).
5.Turn the heat down to a simmer.
6.When the noodles are al dente, add in some cooked shredded chicken and let simmer for another three minutes.
7.Serve with warm buttered bread!
Four Ingredient Buttery Bacon Pasta
A bit of a quick weeknight meal as most of it is done for you and there’s only three main ingredients. Pick up any good-looking fresh ravioli for this recipe. If you don’t have ravioli then literally any pasta is perfectly tasty for this plate.
Ingredients: Pasta, butter, bacon, parmesan, chilli flakes (optional).



1.Cut four pieces of streaky bacon into 1cm pieces and pan fry. Set aside.
2.Cook your ravioli (or standard dry pasta) as per the package instructions.
3.In another small pot, heat up three tablespoons of butter until soft and melted.
4.Once pasta is cooked, drain the water and add the butter and cooked bacon pieces straight away and toss through.
5.Serve with salt, pepper and parmesan and a sprinkling of red pepper flakes if you’re feeling spicy.
